Exceptional Architecture and Gastronomy
Willem Hiele is one of the greatest talents in Belgian and European gastronomy. On the 'OAD Top 100 Restaurants in Europe', Hiele is ranked 68th. For years, the star chef cooked at a high culinary level in the fisherman's cottage where he lived as a child in Koksijde, but recently exchanged his birthplace for his hometown Ostend. In the wide and historic "polders" of "De Keignaert", the new property is surrounded by a sea of greenery. "A villa like an island" Sabato wrote in an interview with Hiele. In the fields surrounding the villa, Willem Hiele plans to plant and harvest to raise awareness and fight against mass consumption. He cooks with what the sea and the polders have to offer.
From fisherman’s cottage to brutalist villa
The property is an old "brutalist" villa designed by architect Jacques Moeschal for the Vanmoerkerke family. Clean, straight lines, dark brown bricks, concrete ceilings and high windows overlooking the polder landscape. In a spacious room with a large window is the restaurant. Small-scale, with 24 covers and tables for two to four people. Next door is a living room for aperitifs with comfortable Bastiano sofa's by Italian designer Tobia Scarpa , bookcases and art. There are also seven hotel rooms where the polders tap on the windows, sometimes cheerful and sometimes moody, typically Belgian.
The interior
You can sip a glass of champagne in the elegant and minimalist Bastiano lounge chair or sofa. Tobia Scarpa designed this classic in 1962, characterised by clean lines and a harmonious balance between form and function. The elegant aperitif tables are by famous designer Eero Saarinen. The TMM floor lamps by Spanish brand Santa & Cole create a cosy atmosphere. The lamps by Miguel Milá, a pioneer of industrial design, can be adjusted in height by gently pulling the cable. If you choose to stay in one of the hotel rooms, you can relax on the terrace, or by the pool in one of the iconic Thonet S 35 N Chair All Seasons loungers.
The chef
Willem Hiele (°1981) grew up in both Ostend and Koksijde in a family of fishermen. As a passionate surfer, he explored the most beautiful seaside spots in the world. Everything he does and makes, is in a way connected to the sea. Based on his education as baker and pastry chef, Willem Hiele has developed his own style into the terroir cuisine he is known for today: both complex and simple at the same time.
